Grilled Hapuku (groper) Steaks with Parsley Dressing

Ingredients


Pumpkin mash

  •  1 small pumpkin, peeled and diced
  •  1 tbsp cumin seeds
  •  1 tbsp canola oil

 Parsley dressing

  •  1 cup fresh parsley
  •  ¼ cup lemon juice
  •  2 tbsp olive oil
  •  1 clove garlic
  •  1 tbsp water

 Grilled fish

  •  4 (approx. 150g each) fish steaks (groper)
  •  2 tsp dried chilli flakes
  •  1 tbsp lemon zest
  •  1 tbsp canola oil
  •  2 cups rocket

Cooking method

Pumpkin mash

  1. Heat oven to 225°C.
  2. Mix together peeled and diced pumpkin with cumin seeds and canola oil.
  3. Spread out on a roasting dish.
  4. Roast for approximately 30 minutes or until cooked through and brown.
  5. Remove from oven and mash in a bowl.

Parsley dressing

  1. In a food processor blend together parsley, lemon juice, olive oil, garlic and water until smooth.

Grilled fish

  1. Rub fish steaks with chilli flakes, lemon zest and canola oil.
  2. Leave to marinate for approximately 30 minutes.
  3. Cook fish steaks either on a BBQ or under a grill for approximately 2 minutes on each side or until just cooked through.

To serve

  1. Mix half of the dressing with the rocket.
  2. Place pumpkin mash, grilled fish and dressed rocket on serving plate.
  3. Drizzle remaining dressing over fish. This recipe serves 4 people.
