Ingredients

  • 24 New Zealand Greenshell™ mussels, half shell
  • ½ cup tom yum paste
  • 3 cups coconut cream
  • 12 cherry tomatoes
  • 1 cup roughly chopped spring onions
  • 2 cups diced pineapple
  • coriander sprigs
  • lime wedges

Cooking method

  1. Remove any fibrous tissue from inside the mussels.
  2. In a pot, whisk the tom yum paste with the coconut cream and heat, whisking well to combine.
  3. Add the mussels and simmer to warm.
  4. Add the tomatoes, spring onions and pineapple and heat through.
  5. To serve, divide between four bowls, garnish with coriander and a lime wedge.
