Ingredients

  • 6 corn tortillas
  • 30ml olive oil
  • 1 lime
  • 1 ripe avocado, peeled
  • 3 large iceberg lettuce leaves
  • 30g carrot, cut into thin strips
  • 20g red onion, cut into thin strips
  • 6 coriander stems, chopped
  • ½tsp ground cumin
  • pinch chilli powder
  • 600g NZ salmon fillet (skin removed)
  • cooking oil

Cooking method

  1. Pre-heat a medium frying pan. Brush one side of a tortilla with olive oil and lightly toast on the oiled side, ensuring they do not become too crisp. Repeat with the remaining tortillas. Cover and keep warm.
  2. Cut lime in quarters lengthways, squeeze the juice from one quarter into a jug and mix with the remaining olive oil, then season to taste.
  3. Crush the avocado and mix with the juice of one lime quarter to prevent discolouration.
  4. Shred lettuce and mix with carrot, onion and coriander.
  5. Mix cumin and chilli with a pinch of salt and season the salmon. Heat cooking oil in frying pan over medium high heat and place salmon into pan on what would have been the skin side down. Cook two thirds through, turn off heat, turn salmon and allow to cook in residual heat of the pan for another 2-3 minutes.
  6. Dress the salad with lime and olive oil dressing. Assemble tacos, spreading avocado into centre, adding dressed salad and flaking warm salmon over the top. Fold tacos in half and serve with remaining lime quarters.
