Ingredients
Pea puree
2 cups baby peas
2 tbsp fresh mint, chopped
2 tbsp white wine vinegar
Battered fish
2 tbsp olive oil
1/2 cup flour
2 eggs
500g fish fillets

Cooking method
Pea puree
Boil or microwave the peas for approximately 3-4 minutes or until hot and just cooked
Drain the peas and place in a food processor with the mint and vinegar
Blend until smooth
Set aside and keep warm until ready to serve
Battered fish
Cut the fish into desired sizes
Place flour in a shallow bowl
Break eggs and beat in another shallow bowl
Heat oil in a large frying pan
Coat fish with the flour and shake off any excess
Dip the floured fish in the egg and then place in the frying pan
Cook for approximately 2 minutes per side or until golden brown and just cooked through
