Ingredients
- 1 kg whole tuatua (live or blanched chilled)
- ½ tsp grated fresh ginger
- 1 medium potato
- 1 leek
- 1 beaten egg
- 1 tbsp flour
- 1 tbsp cornflour
- black pepper
- olive oil
- micro herbs
- caper berries
- aioli
- lime (optional)

Cooking method
- Shuck and finely chop tuatua. Grate ginger, julienne potatoes (or grate) and finely slice leek.
- Mix egg, flour and cornflour to make fritter batter. Add tuatua and vegetables to batter mix, season with pepper, (no salt!)
- Fry tuatua fritters on medium heat with olive oil until golden (3 min each side), drain and keep warm.
- Check to ensure potato and leek are sufficiently cooked. Serve on a bed of micro herbs and garnish with halved capers, aioli and a squeeze of lime juice.
